The Place;
Our client, a classically delightful three star hotel located in an idyllic spot right on the South Coast of England, is now looking to recruit an experienced Head Chef. The property already has a prosperous Food & Beverage operation and the owner has ambitious plans to not only develop the overall quality of the offering but is looking to achieve accolades and certainly up to 2 AA Rosette standard food.
The Job;
The Head Chef will be a key member of the management team and the overall future development of the property. You will be ultimately responsible for ensuring that all food related operations within the property are managed efficiently.
A key part of this Head Chef opportunity will be to compile, cost and produce menu`s that are slick, attractive and most importantly can compete in the desired 2 AA Rosette arena. You will also be expected to manage a fairly significant volume of Conference and Banqueting business which turns over in the region of £500K per annum.
The Head Chef remit will be to manage all control systems within the kitchen by implementing stock management systems, ensuring excellent Food Hygiene and Health & Safety systems, and controlling wage costs within the brigade.
The Person;
This is not a job for someone who is looking for their first Head Chef position. The successful applicant must be able to demonstrate at least 2 AA rosette experience, be able to lead and train the team on the floor while also taking responsibility for, rota`s, stock orders, stock taking. There is also key responsibility for Health & Safety and Food Hygiene.
