Our Client is seeking a Dvelopment Chef to provide 3 home cooked meals a day, which provide a varied and healthy diet. In order to continually develop the food provisions, menu structures and culinary skill, it is essential that the school provide its cooks with training opportunities. This position aims to enable cooks to meet these requirements by creating and implementing development programmes, which identify & deliver training opportunities, monitor their success, and ensure that such development is delivered with enthusiasm, understanding and empathy for the School's ethos.
Responsibilities:
oTo support the Catering Manager when developing the school's menus, with consideration of the Food Standards Agency's Eatwell plate, culinary trends, and the promotion of healthy eating.
oTo produce new dishes for pupils to try and to develop new and imaginative ways to serve food; all new dishes will require recipes and where appropriate the incumbent will offer verbal or practical support to cooks.
oTo monitor culinary standards across all boarding house kitchens, in the three key areas of, Preparation, Production and Presentation.
oTo ensure that all kitchens are operating within hygiene best practices. This will involve the undertaking of kitchen inspections, which will require being recorded in the appropriate documents.
oTo identify areas of practice which can be enhanced and agree with the Catering Manager programmes of development
oWhere necessary and agreed, to organise outside resources to undertake training & development programmes.
oTo establish and deliver training & development programmes with empathy and understanding to recipients.
oTo monitor and record progression of catering staff.
oAll kitchen staff report to the Catering Manager, therefore close communication must be maintained, and work schedules and priorities of work of the Development Chef will be organised with the Catering Manager.
oOut of term time, cooks are not contracted to work. This time will be spent aiding the Catering manager close down kitchens, prepare kitchens and manage any ad hoc kitchen activity which may occur.
oOn occasion there may be reason for the Development Chef to stand in for a School Chef, in the event of absence.
Must have City & Guilds 706 1 & 2 or equivalent with experience as a chef in a reputable establishment, and able to demonstrate cooking a variety of dishes.
