Our client is part of a popular chain of resorts & holiday villagesResort in the UK andUk which is looking for a Head Chef to work in one of their restaurantsOutlet in Thetford.

As a Head Chef it will be your responsibility to ensure the correct preparation and presentation of food is carried out to the company specification at all times. To be responsible for all operations within the food production department in accordance with company specifications. To achieve the budget targets for Food Costs, Britannia hygiene standards and the mystery diner programme.

Quality of Service

To have a full knowledge of all products served to specifications and photographs

To ensure food is prepared for service by supervising staff and completing tasks to specification as per schedule and checklists

Ensure all food is prepared and presented to the correct specification and picture perfect at all times

To supervise preparation of kitchen products ready for service

To undertake work in any section of the restaurant as required

To work as part of a team to ensure maximum customer satisfaction

Suggest and develop new menu items. To work with management on special party menus and buffets, and in the execution thereof.

To ensure that all items are available on the menu at the beginning of each shift

To score a minimum of 85% in the Mystery Diner programme

Willingness to go extra mile for team and guests.

To ensure that kitchen staff work according to their job descriptions

To undertake training requirements for new kitchen staff and the retraining of existing staff as required, including the training of management personnel

To manage Training costs and budgets and the time spent on training.

To follow at all times, procedures outlined in the standards of procedures manuals and Staff Training Programmes

To maintain a BOH labour succession plan, plan, recruit and organise training for replacement staff.

The Kitchen

Control and maintain all food stock levels, including items of bar use, ensuring wastage is kept to a minimum and is recorded.

To order products from nominated suppliers to ensure adequate stock levels.

Control and maintain stock levels of all nominated cleaning and laundry materials.

Ensure that at all times the correct procedure for receiving and checking all incoming goods is carried out by authorised trained kitchen staff and that storage of the same is carried out correctly and in a safe and hygienic way.

Ensure correct stock rotation and labelling of all stock/products

Prepare costed kitchen rotas to ensure kitchen is staffed adequately at all times, within budgets then sanctioned by the General Manager.

To adhere to Company rules on uniform and appearance to ensure all the other Kitchen Staff also meet the specific Company uniform standard.

Maintain accurate and full records of all company documentation

To undertake and supervise the close-down of kitchen operations and completion of tasks.

To achieve, maintain and strive to improve the budget target for Food Costs.

Undertake stock-taking duties at the end of each week and hence calculate food cost and gross profit percentages.

Assist management in the performance of any random spot checks that may occur on occasions.

Organise and control the sorting, counting and checking of used and cleaned laundry from all departments within the Store.

Report any damaged, dangerous or faulty equipment to the Manager on Duty and any accidents that may or have occurred.

To aid and assist the management with all line checks and walkthroughs.

To ensure the proper use and maintenance of equipment.

To inform Central Office of any issues with suppliers.

Job Resposibilities :

Applicants must have 3 years of experience at Chef de Partie level or above. One year of experience as a Sous Chef or above will be desirable, although not essential. Must be a good team player, flexible and motivated, be hands on with good communication skills. Must have a valid UK driving licence as the restaurant is off the public transport route
